I can’t wait to try this! When I was a kid in school, my mom would make me a special sandwich for lunch because I didn’t like traditional “sandwiches “. My go to was always 2 slices of banana bread, with butter and a slice of Velveeta cheese. I know, it sounds strange but give it a try! I can’t wait! Thanks for all your great recipes! This recipe sounds delicious. How well will it behave if I do it as muffins instead of a loaf? I live alone, and when I’m trying to pretend that I’m not going to eat the entire batch in a couple of days, I like to make muffins and put most of them in the freezer for later. I’ve recently discovered that not all quick bread recipes like to be muffins.
