Hey Lori, yes! You could easily keep a second batch warm on a baking sheet or casserole dish in a 275-300°F oven. I’d warm the baking sheet or casserole dish in the oven before transferring the potatoes to it so they don’t hit a cold baking sheet and cool. Enjoy!

Whenever we eat breakfast out, my husband and I order the home fries and ask for extra onions (because there are never enough!). Any suggestions for if you are making a batch for a larger group, for a brunch? I don’t have a pan big enough to make a double batch, so would you keep the first batch warm on a sheet pan in the oven while you make the second batch?
