Hello and happy Frightening Friday!
This is the first year in FOREVER I didn’t decorate for Halloween. Not even one jack-o’lantern, not one spiderweb. And if you knew how many Halloween decorations I have, you’d be aghast I didn’t put them up. Like ALOT ALOT! I feel like a total boo-hoo-Scrooge! But this year, it didn’t happen. However, that just gives me more incentive to get my Christmas tree up. I’m looking at you the first weekend of November! In the meantime, I’ll go buy one bag of candy, make a pot of chili or soup for dinner, and snuggle up under a blanket while I wait for trick-or-treaters to pull me away from the T.V.
I made this tortellini soup with sausage this week. After my husband proclaimed it was the best version I’ve ever made, well, I just might have to make it again for Halloween. I made it on the stovetop, added chickpeas, and topped it with the ricotta cheese and Parmesan cheese topping I put on my lasagna soup. No wonder he loved it so much—CHEESE (and sausage)!
