When it comes to appetizers and dips that make an impression, there are few more popular than cheesy buffalo chicken dip. Everyone loves the flavor of buffalo chicken wings (make that buffalo chicken drumsticks for me!) with their hot and spicy, vinegar-punched chicken wing sauce. They’re pretty much mandatory at any football game watch party, but become an even easier appetizer to serve when you convert them to a dip for New Years Eve or potluck get together.
So when you’re competing for that ultimate cheese pull, slip a crunchy potato chip into this savory, stick to your ribs dip, and stretch that cheese far and wide for a game in itself you’re sure to win.
What’s In Buffalo Chicken Dip
All the flavors of everyone’s favorite buffalo chicken wings are represented in this easy to make dip. It’s cheesy, it’s spicy, it’s chicken wings on a chip. Here’s what makes it perfect for the party:
- cream cheese
- shredded chicken
- pepper jack cheese
- red buffalo hot sauce
- Ranch or blue cheese dressing (homemade or store bought)
- green onion
- blue cheese crumbles
Salad dressing adds an herbed creaminess that loosens the cream cheese mix into a dippable mix. Choose between my homemade Ranch dressing or homemade blue cheese dressing, or choose a high quality store-bought brand.
Just like in my Crock Pot buffalo chicken dip, you can substitute the cream cheese in this dip for mayonnaise or sour cream, but it won’t be as thick or cheesy.
How to Make Buffalo Chicken Dip
Making this dip is supremely easy, but there are a few tricks that will make it even easier and creamier.
Bring the cream cheese to room temperature so it’s easy to mash with a fork and make creamy with the buffalo sauce and dressing.
To save time, use a rotisserie chicken or use baked chicken breast meal prepped ahead of time.
Shred the chicken into small pieces so the chicken doesn’t overpower the dip, but tasters still get that chicken bite.
Cheese Plus More Cheese
I save part of the shredded cheese to melt on top of the dip as it bakes in the oven. The smooth melted white offsets that orange glow the buffalo sauce imparts. Use any creamy, meltable cheese, such as:
- Pepper jack cheese
- Monterey jack
- Provolone
- Mozzarella
- Fontina
For another layer of spunky flavor, top the white shredded cheese with a few crumbles of blue cheese to replicate that blue cheese dressing buffalo chicken wings are usually dipped into.
What Goes With Buffalo Chicken Dip? Make It Kettle Brand Potato Chips
A quintessential dip deserves the king of chips that’s strong enough to wedge through this tempting display of dippable baked cheese. Kettle Brand potato chips stick to basic ingredients with potatoes cooked in batches in an oil-filled kettle instead of on a conveyor belt. Kettle cooking adds extra crispness, crunch, and maximum flavor.
I give guests a chance to try as many Kettle Brand flavors and cuts as they’d like to mix and match. Krinkle cut. Flat cut. Sea salt and vinegar. Sour cream and onion. Dill pickle. Salt and peppered. Pepperoncini. Honey Mustard. Barbecue. Fiery Thai. New York Cheddar. Chile Verde. So. Many. Flavors.
How Long Buffalo Chicken Dip Will Last in the Fridge
Buffalo chicken dip will last in the fridge for 4-5 days, making it a great option to assemble and make ahead, then bake later when you’re ready to serve.
How to Freeze and Reheat Buffalo Chicken Dip
To freeze this dip, prepare it but don’t bake it before freezing. To freeze, scoop the dip into a freezer-safe container or gallon freezer bag and freeze for 1 to 3 months.
To cook in the oven from frozen, thaw the cheese dip in the refrigerator, cover with a lid or foil, and bake in an oven save container at 350°F for 20 minutes.
To reheat the buffalo chicken dip, remove it from the refrigerator 30 minutes before baking, preheat the oven to 325°F, and bake until bubbly and warmed through, about 20-30 minutes.
